ITC Narmada, a luxury collection hotel in Ahmedabad, is set to transport its guests to the royalty of Rajasthan’s cuisine, with its much-anticipated food festival, Royal Kitchen – Mewar Food Festival. Celebrating the rich, nuanced flavours of Mewari cuisine and curated with utmost authenticity, the festival will take place at Adalaj Pavillion, the signature all-day diner at ITC Narmada, from April 18 to April 27, over dinner from 7pm to 11pm.
Chef Anvir Singh, Senior Master Chef, ITC Rajputana, Jaipur, and Chef Gaurav Lavania, Executive Chef at ITC Narmada, a regal spread that pays homage to Mewar’s culinary legacy. The ambience will be elevated by themed décor inspired by Rajasthan’s royal heritage, giving diners a truly immersive experience into their meals.

Each dish in this specially curated menu, has been thoughtfully selected to represent the essence of Mewari kitchens — from rustic meat-based preparations to vibrant vegetarian varieties,” said Chef Anvir Singh.
The menu features a royal array of preparations including Murgh ke Sooley, Chapli Kebab, Fish Salami, Junglee Maas, Gatta Curry, Mangodi Pulao, Pitor Kadhi, and Dal Bikaneri. Vegetarian highlights span across regions, with offerings like Sangri Paneer, Jodhpuri Kala Chana, Paneer Methi Dana, and Gatta Pulao, ensuring there’s something for every palate.
Mewari cuisine is deeply rooted in the arid geography and regal traditions of southern Rajasthan. Cooking techniques in the region have evolved to preserve flavour while adapting to limited water availability—resulting in methods like slow-cooking over wood fire, dry roasting, and the use of clarified butter or ghee in place of water for cooking. Smoking meats using the dhungar technique imparts a signature depth to many dishes. Staples in a Mewari kitchen include millets like bajra and jowar, legumes such as chana and moong, and sun-dried vegetables like ker, sangri, and gunda. The cuisine makes extensive use of whole spices, dried red chillies, yogurt, and gram flour (besan), lending each dish its distinct, robust character.
