This quintessential Maharashtrian festive delicacy has travelled far beyond its traditional boundaries and continues to evolve with contemporary fillings and flavours.

This Ganesh festival, Celebrity Master Chef Dr. Kaviraj Khialani brings a delightful collection of six Karanji variations that blend tradition with imagination—from desi nariyal and khajoor to beetroot, lauki, carrot, gulkhand and a tempting videsi chocolate twist.

A crescent of tradition with endless possibilities

Traditionally prepared with a simple flour-based outer covering and a sweet filling of coconut, sugar, raisins and cardamom, Karanji is usually deep-fried until crisp and golden. When prepared in ghee, its aroma becomes even more irresistible.

The outer shell remains rooted in tradition, while the filling offers an open canvas for creativity.

Classic variations include copra, using dried coconut; puttani, featuring roasted gram dal; and richer coconut versions enhanced with cashews, pistachios and poppy seeds. Jaggery can replace sugar, while baked Karanji offers an alternative for those seeking a lighter preparation.

Dates, too, have found a delicious place in contemporary Karanji.

The possibilities are almost limitless. Crumbled boondi ladoo, burfi or other mithai can be blended with a little mava to create indulgent fillings. Eggless chocolate brownie combined with gulkhand offers a modern fusion, while halwa and sheera can also be transformed into innovative Karanji fillings.

DESI NARIYAL WALI KARANJI

A fragrant coconut-and-nut filling wrapped in a delicate pastry shell—this is the quintessential festive Karanji with a rich, traditional soul.

Ingredients

For the Karanji dough:

  • Maida – 2 cups
  • Ghee – 2 tbsp
  • Salt – ¼ tsp
  • Milk – ¼ cup or as needed

For the Nariyal stuffing:

  • Desiccated coconut – ½ cup
  • Ghee – 2 tsp
  • Green cardamom powder – ¼ tsp
  • Cashew powder – 2 tsp
  • Raisins – 2–3 tsp, chopped
  • Dates – 2–3 tsp, chopped
  • Almonds – 2–3 tbsp, finely sliced
  • Powdered sugar – 2–3 tsp or to taste

For frying:

  • Oil – as needed

Method

  • Assemble all the ingredients.
  • Prepare a semi-hard, firm and pliable dough. Cover with a damp muslin cloth and allow it to rest for 20–25 minutes.
  • Meanwhile, heat ghee in a thick-bottomed pan. Add the coconut and lightly sauté over low heat.
  • Add cardamom powder, cashew powder, almonds, raisins and dates. Mix well. Add powdered sugar, cook for 1–2 minutes and switch off the flame. Allow the filling to cool.
  • Divide the dough into 12–16 lemon-sized portions. Roll each portion into a thin round and trim with a round cutter for uniformity. Place 2–3 tsp of filling on one side. Moisten the edges with a little water, fold and seal. Crimp the edges with your fingers or a fork.
  • Heat oil in a kadai. Gently place the Karanji in the hot oil, frying only a few at a time.
  • Fry until crisp and golden. Drain on kitchen paper and allow to cool before storing in an airtight container.

 AKHROAT AUR KHAJOOR WALI KARANJI

Walnuts, dates and mava come together in a luscious filling that delivers a rich, nutty and naturally sweet festive bite.

Ingredients

For the Karanji dough:

  • Maida – 2 cups
  • Ghee – 2 tbsp
  • Salt – ¼ tsp
  • Milk – ¼ cup or as needed

For the Akhroat aur Khajoor stuffing:

  • Mava – ½ cup, grated
  • Ghee – 2–3 tsp
  • Green cardamom powder – ¼ tsp
  • Almond powder – 2 tsp
  • Raisins – 2–3 tsp, chopped
  • Dates – ½ cup, finely chopped
  • Walnuts – 2–3 tbsp, finely sliced
  • Powdered sugar – 2–3 tsp or to taste

For frying:

  • Oil – as needed

Method

  • Prepare the ingredients and make a firm, pliable dough. Cover and rest for 20–25 minutes.
  • Heat ghee in a thick-bottomed pan. Add mava and dates and sauté lightly over low heat.
  • Add cardamom powder, almond powder, walnuts and raisins. Mix well.
  • Add powdered sugar, cook for 1–2 minutes and switch off the flame. Allow the filling to cool.
  • Divide the dough into 12–16 portions and roll each into a round. Place 2–3 tsp filling on one side, moisten the edges, fold and seal. Crimp with fingers or a fork.
  • Heat oil and fry the Karanji in batches without overcrowding the pan.
  • Fry until crisp and golden. Drain, cool and store in an airtight container.

CHUKANDAR AUR CHAROLI WALI KARANJI

A striking contemporary creation where beetroot lends natural colour and earthy sweetness, while charoli adds a delicate nutty character.

Ingredients

For the Karanji dough:

  • Maida – 2 cups
  • Ghee – 2 tbsp
  • Salt – ¼ tsp
  • Milk – ¼ cup or as needed

For the Chukandar aur Charoli stuffing:

  • Mava – ½ cup, grated
  • Ghee – 2–3 tsp
  • Beetroot – 2 medium, peeled and grated
  • Green cardamom powder – ¼ tsp
  • Raisins – 2–3 tsp, chopped
  • Dates – ½ cup, finely chopped
  • Charoli – 2–3 tsp
  • Powdered sugar – 2–3 tsp or to taste

For frying:

  • Oil – as needed

Method

  • Prepare the dough, cover with a damp muslin cloth and rest for 20–25 minutes.
  • Heat ghee in a thick-bottomed pan. Add grated beetroot and dates and sauté over low heat for 3–4 minutes.
  • Add grated mava and cook for another 3–4 minutes.
  • Add cardamom powder and charoli. Mix well, add powdered sugar and cook for 1–2 minutes. Switch off the flame and allow the filling to cool.
  • Divide the dough into 12–16 portions. Roll, fill with 2–3 tsp of the mixture, moisten the edges and seal firmly.
  • Deep-fry in batches until crisp and golden.
  • Drain, cool and store in an airtight container.

LAUKI AUR BADAM WALI KARANJI

A fascinating combination of bottle gourd, mava, almonds and dates transforms a familiar vegetable into a festive sweet filling.

Ingredients

For the Karanji dough:

  • Maida – 2 cups
  • Ghee – 2 tbsp
  • Salt – ¼ tsp
  • Milk – ¼ cup or as needed

For the Lauki aur Badam stuffing:

  • Mava – ½ cup, grated
  • Ghee – 2–3 tsp
  • Lauki/Dudhi/Bottle gourd – 300 g, peeled and grated
  • Green cardamom powder – ¼ tsp
  • Almond powder – 2 tsp
  • Raisins – 2–3 tsp, chopped
  • Dates – ½ cup, finely chopped
  • Powdered sugar – 2–3 tsp or to taste

For frying:

  • Oil – as needed

Method

  • Prepare a firm, pliable dough and allow it to rest for 20–25 minutes.
  • Heat ghee in a thick-bottomed pan. Add grated bottle gourd and cook for 2–3 minutes.
  • Add grated mava and dates and sauté gently.
  • Add cardamom powder and almond powder. Mix well, followed by powdered sugar. Cook for 1–2 minutes and switch off the flame.
  • Cool the filling completely.
  • Divide and roll the dough into 12–16 rounds. Fill each with 2–3 tsp of the mixture, moisten the edges and seal.
  • Fry in hot oil until crisp and golden. Drain, cool and store airtight.

VIDESI TADKE WALI KARANJI

When traditional Karanji meets chocolate, berries and dates, the result is a playful fusion that promises to surprise the festive palate.

Ingredients

For the Karanji dough:

  • Maida – 2 cups
  • Ghee – 2 tbsp
  • Salt – ¼ tsp
  • Milk – ¼ cup or as needed

For the Videsi Tadke stuffing:

  • Dark/bitter chocolate – ¼ cup, grated
  • White chocolate – ¼ cup, grated
  • Butter – 2 tsp
  • Almond flakes/sliced almonds – 2–3 tsp
  • Raisins – 2–3 tsp, chopped
  • Dates – ½ cup, finely chopped
  • Digestive biscuits – 4–5, powdered
  • Apricots/berries/prunes – 2–3 tbsp, chopped
  • Glazed cherries – 5–6, chopped
  • Powdered sugar – 2–3 tsp or to taste

For frying:

  • Oil – as needed

Method

  • Prepare the dough and allow it to rest for 20–25 minutes.
  • Warm butter in a thick-bottomed pan. Add the chopped fruits, nuts, powdered digestive biscuits and dates. Sauté lightly.
  • Add the remaining nuts and dried fruits and mix well.
  • Add powdered sugar and cook for 1–2 minutes. Switch off the flame and allow the mixture to cool.
  • Divide the dough into 12–16 portions and roll into rounds.
  • Place 2–3 tsp of filling on each round. Moisten the edges, fold and seal securely. Crimp with fingers or a fork.
  • Fry in batches until crisp and golden. Drain, cool and store in an airtight container.

GAJAR AUR GULKHAND WALI KARANJI

Carrot, mava, dates and the floral sweetness of gulkhand come together in this aromatic festive creation.

Ingredients

For the Karanji dough:

  • Maida – 2 cups
  • Ghee – 2 tbsp
  • Salt – ¼ tsp
  • Milk – ¼ cup or as needed

For the Gajar aur Gulkhand stuffing:

  • Mava – ½ cup, grated
  • Ghee – 2–3 tsp
  • Carrots – 300 g, peeled and grated
  • Green cardamom powder – ¼ tsp
  • Almond powder – 2 tsp
  • Raisins – 2–3 tsp, chopped
  • Dates – ½ cup, finely chopped
  • Powdered sugar – 2–3 tsp or to taste
  • Gulkhand – 2–3 tsp

For frying:

  • Oil – as needed

Method

  • Prepare the dough and allow it to rest for 20–25 minutes.
  • Heat ghee in a thick-bottomed pan. Add grated carrots and cook for 2–3 minutes.
  • Add grated mava and dates and sauté gently.
  • Add cardamom powder and almond powder. Mix well, add powdered sugar and cook for 1–2 minutes. Switch off the flame.
  • Allow the filling to cool completely. Add gulkhand, mix well and refrigerate for 30 minutes.
  • Divide the dough into 12–16 portions and roll into rounds. Place 2–3 tsp of filling on each, moisten the edges, fold and seal firmly.
  • Fry until crisp and golden, drain on kitchen paper and cool before storing in an airtight container.
