Having honed his craft under master chefs and showcased his skills at international Sri Lankan food festivals, Chef Rathnayake is known for his ability to capture the island’s diverse culinary traditions.
Chef Rathnayake’s passion for preserving Sri Lanka’s culinary heritage shows through every dish, offering guests a true taste of the island’s authentic flavours. Whether you are a connoisseur of Sri Lankan cuisine or discovering its aromas for the first time, this food festival at Mynt promises a feast of tradition and authenticity.
At this exclusive festival, guests can indulge in signature delicacies like Kalupol Chicken Curry, a rich and aromatic dish infused with Sri Lankan roasted spices and coconut; the beloved Egg Hopper with Sambal and Kiri Hodi, a delicious combination of crispy hoppers paired with saffron-infused coconut curry; and the fiery Jaffna Style Crab Curry, an aromatic curry made with fresh crab, inspired by the bold spices and coastal flavours of the northern Jaffna region. Other must-try dishes include the tangy Brinjal Moju, a traditional Sri Lankan-pickled eggplant dish with a mix of sweet and spicy flavours; the comforting Polos Curry (Young Jackfruit Curry), a delicious, tender curry made with young jackfruit, often known as a vegetarian alternative to meat, but with rich, savoury flavours; the exquisite Lamprais, a fragrant rice dish wrapped in banana leaves, with a mix of rice, meats and rich gravy; and Pol Sambal, a classic accompaniment made with freshly grated coconut, chili and a touch of lime, offering the perfect balance of spice and tang.
