CELEBRITY MASTER CHEF DR KAVIRAJ KHIALANI

A festival of lights, a celebration of flavours and six bowls of sheer happiness! When the diyas illuminate our homes, the fragrance of cardamom wafts through the kitchen and the festive spirit fills the air, nothing completes the Diwali celebrations quite like a lovingly prepared bowl of traditional Indian dessert. This Diwali, let sweetness take centre stage with an irresistible collection of six imaginative kheer creations that promise to pamper the palate, delight the eyes and add a memorable culinary sparkle to every festive gathering!

Diwali is synonymous with togetherness, cherished family traditions, beautifully decorated homes and, above all, the irresistible magic of festive food. While traditional mithai, farsan and chocolates have their own special place in our celebrations, homemade desserts offer an opportunity to bring loved ones together and create memories that linger long after the festivities are over.

For some, the comforting familiarity of classic rice kheer, creamy rabdi and traditional pedha remains an eternal favourite. Others love experimenting with contemporary combinations, innovative ingredients and eye-catching presentations. The exciting culinary world of festive desserts offers room for both traditions and transformations.

  • From timeless Indian rice kheer to contemporary dessert innovations, celebrate Diwali

  • Celebrity Master Chef Dr Kaviraj Khialani brings together traditional flavours, modern
    culinary imagination and easy-to-follow recipes.

    in a dessert extravaganza.
  • Make every festive gathering memorable with simple ingredients, beautiful presentations
    and a little culinary magic.

As a chef, I have always believed that cooking should be an enjoyable experience rather than a time- consuming exercise. A handful of easily available ingredients, a little imagination and the right balance of flavours can transform an everyday dessert into something truly extraordinary. My Diwali selection this year revolves around the evergreen appeal of kheer, presented through six distinctive interpretations. From the nutty indulgence of dates and walnuts to the delicate richness
of makhana and almonds, from the colourful freshness of seasonal fruits to the irresistible coming together of rabdi and seviyan, each preparation brings its own personality to the festive table.

While festive indulgence is part of the celebration, mindful choices also matter. One can adjust the sweetness, moderate the use of condensed milk and mava, and incorporate nuts, fruits and other ingredients to create desserts suited to individual preferences.

So, let us stir up some happiness, add a generous helping of creativity and celebrate this Diwali with
six bowls of deliciousness!

assorted dry fruits and serve warm or chilled after refrigerating for 30–45 minutes.

Chef’s special touch: A few strands of saffron soaked in warm milk before adding them to the kheer
will enhance its colour, aroma and festive appeal.

KHAJOOR AUR AKHROT WALI KHEER

THE NATURAL SWEETNESS OF DATES MEETS THE CRUNCH OF WALNUTS

Here comes a delightful combination of wholesome ingredients and indulgent flavours! The natural sweetness of dates, the earthy crunch of walnuts and the comforting texture of brown rice create a distinctive kheer with a contemporary personality. A delicate cinnamon note and a garnish of chocolate shavings take this dessert a notch higher.

  • Sugar – as per taste
  • Jaggery – optional, as desired
  • Brown rice – 1 cup, cooked and crushed
  • Cinnamon powder – ¼ tsp

  • Add the crushed cooked brown rice and mix well. Sweeten with sugar, jaggery or dates
    according to preference.
  • Add ghee and simmer for 6–8 minutes.
  • Stir in cinnamon powder and check the consistency as the mixture thickens.
  • Transfer into dessert bowls and garnish generously with chopped walnuts, almonds and
    raisins.
  • Finish with grated dark chocolate. Fresh fruits and crushed digestive biscuits can be used as
additional toppings. Serve warm or chilled.

Chef’s special touch: A layer of crushed biscuits at the bottom of individual dessert glasses gives this
kheer an interesting pudding-like texture.

MAKHANE AUR BADAM KI KHEER

ROYAL LOTUS SEEDS, ALMONDS AND A FRAGRANT FESTIVE FINISH

If there is one dessert that brings together elegance, simplicity and a touch of royal indulgence, it is this makhana and almond kheer. Lightly toasted lotus seeds absorb the creamy milk beautifully, while almond paste lends a luxurious consistency. Finished with rose petals and sliced almonds, this preparation is as attractive as it is delicious.

Ingredients

  • Milk – 750 ml
  • Sugar – as per taste
  • Green cardamom powder – ¼ tsp
  • Condensed milk – ¼ cup
  • Makhana/lotus seeds – 1 cup, lightly toasted
  • Rose water – 1–2 tsp
  • Almond paste – 2–3 tsp
  • Sliced almonds – 1–2 tsp
  • Apricots or dates – as desired
  • Dried rose petals – 2–3 tsp, for garnish

Method

  • Arrange all the ingredients required for the preparation.
  • Bring the milk to a boil and simmer until it reduces slightly.
  • Add cardamom powder and sugar according to taste.
  • Add the toasted makhana and almond paste. Simmer for 4–6 minutes.
  • Incorporate condensed milk for a richer and creamier consistency.
  • Add the sliced almonds and chopped apricots or dates, if desired. Simmer for another 3–4
    minutes.
  • Finish with rose water, transfer into small serving cups or dessert bowls and garnish with
nuts and dried rose petals. Serve warm or chilled.

Chef’s special touch: Lightly crush a small portion of the toasted makhana before adding it to the
milk. This helps create a thicker, more textured kheer.

PHALDAARI KHEER

A COLOURFUL FRUIT-AND-CREAM DESSERT THAT CELEBRATES FESTIVE ABUNDANCE

Why settle for ordinary when a dessert can be a colourful celebration in itself? Phaldaari kheer brings together creamy rice pudding, fragrant saffron, assorted nuts and a refreshing selection of fresh fruits. Its attractive layers, contrasting textures and delightful combination of flavours make it a wonderful addition to a contemporary Diwali dessert menu.

Ingredients

  • Milk – 750 ml
  • Sugar – as per taste
  • Green cardamom powder – ¼ tsp
  • Mava – ¼ cup, grated
  • Condensed milk – ¼ cup
  • Rice paste – 2–3 tbsp
  • Saffron – 8–10 strands
  • Almonds – 1–2 tsp, sliced
  • Cashews – 1–2 tsp, sliced
  • Raisins – 1–2 tsp
  • Cherries – 2–3 tsp, sliced
  • Kiwi and strawberries – ¼ cup, cut
  • Pineapple, apple and pear – ½ cup, cut
  • Chocolate chips – 1–2 tsp, for garnish

Method

  • Prepare all the ingredients and keep them ready.
  • Bring the milk to a boil and allow it to reduce slightly. Add sugar according to taste.
  • Stir in the rice paste and cardamom powder. Continue cooking on a low-to-medium flame,
    stirring regularly to prevent lumps.
  • Add mava, saffron and assorted nuts. Simmer for 15–20 minutes or until the kheer develops
    a creamy consistency.
  • Switch off the flame and allow the mixture to cool. Add chocolate chips or white or dark
    chocolate, if desired.
  • Arrange the kheer in pudding dishes, glass bowls or individual dessert glasses. Layer with
fresh fruits and dry fruits of your choice.
  • Refrigerate for 1–2 hours and serve chilled.

Chef’s special touch: Add fresh fruits only after the kheer has cooled completely. This preserves their freshness and prevents them from releasing excess moisture into the dessert.

RABDI AUR KHEER KA MILAN

WHEN TWO INDIAN DESSERT CLASSICS UNITE TO CREATE ONE GRAND CELEBRATION

  • For the presentation, begin with a layer of seviyan kheer at the base of individual dessert glasses. Add fresh fruits, followed by small portions of your favourite Indian mithai.
  • Top with chilled rabdi, chocolate chips and assorted dry fruits. Refrigerate for 1–2 hours
    before serving.

Chef’s special touch: Garnish each glass with a tiny piece of jalebi or motichoor ladoo just before serving. It adds a spectacular traditional touch to this contemporary dessert.

SHUBH DIPAVALI KI KHEER

A FESTIVE LAUKI, SOOJI AND COCONUT MILK CREATION

What better way to conclude this festive collection than with a special kheer created in the spirit of Shubh Dipavali? Bottle gourd, popularly known as lauki, takes on a delicious new identity when combined with creamy milk, roasted semolina, mava and coconut milk. The result is a comforting, custard-like dessert with an appealing texture and a delicate balance of flavours.

Ingredients

  • Milk – 750 ml
  • Sugar – as per taste
  • Green cardamom powder – ¼ tsp
  • Lauki/bottle gourd – 250 g, peeled and grated
  • Ghee – 2–3 tsp
  • Mava – 100 g, grated
  • Pistachios – 2–3 tsp, chopped
  • Raisins – 2 tsp, chopped
  • Condensed milk – ¼ cup
  • Sooji/rava – ½ cup
  • Thick coconut milk – ½ cup

Method

  • Prepare all the ingredients and keep them ready.
  • Bring the milk to a boil, reduce the flame and simmer with cardamom powder.
  • Dry-roast the sooji for a couple of minutes until aromatic.
  • Heat ghee in a separate pan, add grated lauki and cook for a few minutes. Add the roasted
    sooji and mix well.
  • Incorporate grated mava and condensed milk, adjusting the sweetness to taste.
  • Add this lauki mixture to the simmering milk and stir thoroughly to combine.
  • Cook over a medium flame, stirring occasionally, until the kheer develops a thick, smooth,
    custard-like consistency.
  • Add coconut milk towards the end and simmer gently for another 2–3 minutes without
allowing the mixture to boil vigorously.
  • Garnish with chopped pistachios and raisins. Serve warm or chilled.

Chef’s special touch: Ensure that the grated lauki is thoroughly cooked before combining it with the milk. A little coconut milk towards the end lends a subtle tropical note to this distinctive festive creation.

A SWEET FINALE: LET EVERY BOWL TELL A FESTIVE STORY!

Diwali is not merely about lighting lamps or exchanging gifts; it is about sharing happiness, celebrating relationships and creating memories around the dining table. These six kheer creations are an invitation to rediscover the magic of Indian desserts while allowing our culinary imagination to take flight.

Whether you choose the nostalgic comfort of Chawal Ki Nutkhut Kheer, the natural sweetness of Khajoor Aur Akhrot Wali Kheer, the royal appeal of Makhane Aur Badam Ki Kheer or the spectacular Rabdi Aur Kheer Ka Milan, every preparation has something special to offer.

My suggestion is to experiment with presentation, serve smaller individual portions and adjust sweetness according to personal preference. After all, a little creativity can turn even the simplest homemade dessert into a memorable festive experience.

Wishing everyone a very Happy, Prosperous and Sweet Diwali 2026! May the glow of diyas brighten every home and may every celebration be filled with love, laughter, good health and irresistible flavours!
