Recipes using Drumsticks
DRUMSTICK SAMBAR
Ingredients
- 1 cup Toor dal (pigeon peas), cooked
- 2-3 drumsticks, cut into pieces
- 1 small lemon-sized tamarind ball, soaked in water
- 2 tablespoons Sambar powder
- 1 teaspoon Mustard seeds
- 1 teaspoon Cumin seeds
- A pinch of Asafoetida (hing)
- A handful of Curry leaves
- 1/2 teaspoon Turmeric powder
- 1 medium-sized Onion, chopped
- 2 medium-sized Tomatoes, chopped
- 2-3 Green chilies, slit
- 2 tablespoons Oil
- Salt to taste
- Fresh coriander leaves for garnish
Method
- Cook toor dal until soft, and keep it aside.
- Soak tamarind in water, extract the pulp, and set it aside.
- In a pan, heat oil. Add mustard seeds, cumin seeds, hing, and curry leaves. Let them splutter.
- Add chopped onions and sauté until golden brown. Add green chilies and tomatoes. Cook until tomatoes are soft.
- Add drumsticks, turmeric powder, and salt. Stir well.
- Pour in the tamarind pulp and let it simmer until drumsticks are tender.
- Add sambar powder to the mixture. Mix well and cook for a few more minutes.
- Combine the cooked toor dal with the drumstick mixture. Simmer until well combined.
- Garnish with fresh coriander leaves.
- Serve hot with rice.
DRUMSTICK PULAO
Ingredients
- 1 cup Basmati rice
- 2-3 drumsticks, cut into pieces
- 1 Onion, thinly sliced
- 1 Tomato, chopped
- 1/2 cup Peas (fresh or frozen)
- 2 Green chilies, chopped
- 1 teaspoon Ginger-garlic paste
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Garam masala
- 1/2 teaspoon Cumin seeds
- A handful of Mint leaves, chopped
- A handful of Coriander leaves, chopped
- 2 tablespoons Ghee or oil
- Salt to taste
Method
- Rinse the basmati rice and soak it in water for 30 minutes. Drain the water.
- In a pot, heat ghee or oil. Add cumin seeds and let them splutter.
- Add thinly sliced onions and sauté until golden brown.
- Add ginger-garlic paste, green chilies, and chopped tomatoes. Cook until tomatoes are soft.
- Add drumsticks, peas, turmeric powder, and garam masala. Mix well.
- Add soaked and drained basmati rice. Stir gently to coat the rice with the masala.
- Pour in 2 cups of water, add salt, and bring it to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer until the rice is cooked and water is absorbed.
- Fluff the rice with a fork, add chopped mint and coriander leaves.
- Serve hot, garnished with additional herbs if desired.
DRUMSTICK MASALA
Ingredients:
- 2-3 drumsticks, cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 1/2 cup yogurt
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin seeds
- A handful of coriander leaves, chopped
- 3 tablespoons oil
- Salt to taste
Method
- In a pan, heat oil. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste, chopped tomatoes, and cook until tomatoes are soft.
- Add drumsticks, red chili powder, turmeric powder, garam masala, and coriander powder. Mix well.
- Pour in yogurt and cook until the drumsticks are tender.
- Adjust salt, garnish with coriander leaves, and serve hot with rice or bread.
DRUMSTICK CHUTNEY
Ingredients
- 2-3 drumsticks, peeled and chopped
- 1 cup grated coconut
- 2 green chilies
- 1 teaspoon tamarind paste
- 1/2 teaspoon mustard seeds
- A pinch of asafoetida (hing)
- 2 tablespoons oil
- Salt to taste
Method
- Boil chopped drumsticks until tender. Allow them to cool.
- In a blender, combine boiled drumsticks, grated coconut, green chilies, and tamarind paste. Blend into a smooth chutney.
- In a pan, heat oil, add mustard seeds, and let them splutter. Add a pinch of hing.
- Pour the tempering over the chutney. Mix well, adjust salt, and serve with dosa or rice.
DRUMSTICK CURRY

- 6-8 drumsticks
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 green chilies, chopped
- 1 tsp ginger-garlic paste
- Spices: 1/2 tsp turmeric, 1 tsp red chili powder, 1 tsp coriander powder, 1/2 tsp cumin powder, 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 1 tsp mustard seeds, 1 tsp cumin seeds, a pinch of asafoetida
- Fresh coriander for garnish

- Sauté mustard seeds, cumin seeds, asafoetida, onions, green chilies, and ginger-garlic paste.
- Add tomatoes, cook until soft.
- Add spices, drumsticks, and sauté.
- Add water, cover, and simmer until drumsticks are tender.

DRUMSTICK STIR–FRY
Ingredients
- 2-3 drumsticks, cut into thin strips
- 1 cup carrots, julienned
- 1 cup French beans, chopped
- 1 onion, sliced
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal (black gram)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- A handful of curry leaves
- 2 tablespoons oil
- Salt to taste
Method
- In a pan, heat oil. Add mustard seeds and urad dal. Let them splutter.
- Add sliced onions and sauté until they become translucent.
