Chocolaty course
The Ruby chocolate macaroons sets the tone for what is to follow. The first serve is the delectable Berrylicious (Berries, warm orange and gold chocolate emulsion), followed by Chocolate and Rose (Milk chocolate cremeux, raspberry and rose reduction); Chocolate Entremets (Steamed chocolate cake, feuillentine crisp, hazelnut ganache); and the final Aphrodisiac serve of Ginseng Bonbons, warm single origin dark chocolate cappuccino.
