Celebrity Master Chef Dr Kaviraj Khialani brings the versatile ingredient alive with five delicious creations that prove one thing: makhana need never be boring again.

Makhana has steadily moved from traditional kitchens and fasting menus into contemporary everyday cooking. Its appeal lies not only in its delicate crunch but also in its ability to absorb the flavours of spices, gravies, herbs and dairy-based preparations.

It is also valued as a nutrient-dense ingredient and is commonly included in recipes designed around balanced eating. Makhana is generally regarded as a low-glycaemic-index food and is a source of carbohydrates and minerals; however, its overall nutritional value depends on the portion size and the other ingredients used in a recipe.

WHY MAK HANA DESERVES A PLACE IN YOUR KITCHEN

Makhana can be a useful ingredient for those looking to add variety to their meals. It is often used in recipes intended to support weight-management eating patterns, while its mineral content makes it an interesting addition to a varied diet.

It is also enjoyed for its satisfying crunch and versatility. From lightly roasted makhana seasoned with black pepper or masala to elaborate curries and desserts, the possibilities are surprisingly wide.

As with any ingredient, however, claims about specific disease prevention or treatment should not be overstated. The best approach is to enjoy makhana as part of a diverse, balanced diet.

FROM CRUNCHY SNACKS TO SUMPTUOUS GRAVIES

The simplest way to enjoy makhana is to lightly roast it and season it with salt, black pepper or a favourite spice blend. But the culinary journey does not stop there.

A makhana-mattar ki subzi with onion-tomato masala, green peas and coriander makes an excellent accompaniment to hot phulkas. For a no-onion, no-garlic preparation, makhana can be simmered in a tomato, cashew and cream gravy with paneer and capsicum.

For something cool and refreshing, makhane aur anar ka raita combines toasted makhana, juicy pomegranate, roasted cumin, kala namak and mint.

Makhana can also be introduced into korma gravies, vegetable preparations and pulaos. And when the sweet tooth strikes, possibilities range from makhane ki kheer and rabdi to makhana pannacotta, gulkhand mousse and makhana pancakes.

Here are five tempting creations to bring that magic to your table.

KAJU MAKHANE KA MILAAP

Creamy, nutty and irresistibly rich

A luxurious meeting of crunchy makhana, silky cashew, paneer and capsicum in a gently spiced gravy, this is the sort of dish that can turn an ordinary roti dinner into a celebration.

Ingredients

  • Makhana/fox nuts – 2 cups, fried or lightly roasted
  • Oil/ghee – 2 tbsp
  • Cumin seeds – ½ tsp
  • Ginger-garlic-chilli paste – 1 tsp
  • Boiled onion paste – ½ cup
  • Turmeric powder – ½ tsp
  • Coriander powder – 1 tsp
  • Garam masala – ¼ tsp
  • Red chilli powder – ¼ tsp
  • Curd – ½ cup, mixed with 2 tsp cashew paste
  • Coconut milk – ½ cup
  • Fresh cream – 2–3 tbsp
  • Water – ½ cup, as required
  • Paneer cubes – ½ cup
  • Capsicum cubes – ½ cup
  • Salt – to taste
  • Kasuri methi – 1 tsp
  • Fresh coriander – 2 tbsp
  • Fried cashews and raisins – 2 tbsp, for garnish

Method

  • Keep all the ingredients ready before beginning.
  • Heat the oil and ghee. Add cumin seeds, followed by the ginger-garlic-chilli paste and onion paste. Sauté for 2–3 minutes, adding a splash of water if required.
  • Add the curd-cashew mixture, turmeric, coriander powder, garam masala, chilli powder, kasuri methi and salt. Bhunao well for about a minute.
  • Add water and simmer for 3–4 minutes.
  • Stir in the coconut milk and cream. Simmer gently for another 2 minutes.
  • Add paneer, capsicum and roasted makhana. Bring the gravy to a gentle boil and adjust the seasoning.
  • Garnish with fried cashews, raisins and coriander.

Chef’s serving suggestion: Serve piping hot with phulkas, rotis or naan.

METHI SAAGWALA MAKHANA

A fragrant green delight with a delicious textural twist

Fresh methi and coriander give this preparation an earthy freshness, while roasted makhana brings a wonderful bite to every mouthful.

Ingredients

  • Makhana – 2 cups, fried or roasted
  • Oil/ghee – 2 tsp
  • Ginger – 1 tsp, chopped
  • Garlic – 1 tsp, chopped
  • Green chillies – 2–3, chopped
  • Fresh methi – 1 cup
  • Fresh coriander – 2 cups
  • Tomatoes – 2–3, grated or puréed
  • Salt – to taste
  • Hing – 1 pinch
  • Turmeric powder – ½ tsp
  • Red chilli powder – ½ tsp
  • Coriander powder – 1 tsp
  • Cumin powder – ¼ tsp
  • Soya chunks – ½ cup, soaked in warm water for 15 minutes

Method

  • Prepare and measure all the ingredients.
  • Heat oil or ghee. Add hing, ginger, garlic and green chillies and sauté.
  • Add tomatoes, salt, methi, coriander and the powdered spices. Mix well and add a little water.
  • Add the drained soya chunks and bhunao with the masala for a minute.
  • Cover and simmer for 8–10 minutes.
  • Add the roasted makhana and cook for another 3–4 minutes.
  • Serve hot with rotis or phulkas and a bowl of cooling raita.

SUBZ MAKHANA KORMA

A royal medley of vegetables, nuts and fragrant makhana

Creamy, mildly spiced and fragrant with cardamom, cinnamon and rose water, this vegetable korma turns makhana into a star of festive-style cooking.

Ingredients

  • Makhana/fox nuts – 1 cup, fried
  • Assorted vegetables – carrots, beans, cauliflower, peas and potatoes, pre-cooked/blanched
  • Oil – 2 tsp
  • Ghee – 2 tsp
  • Shahi jeera – 1 tsp
  • Bay leaves – 2
  • Curd – ¼ cup, mixed with 2 tsp fresh cream
  • Kasuri methi – 1 tsp
  • Salt – to taste
  • Garam masala – ¼ tsp
  • Water – ¼ cup
  • Rose water – 1 tsp
  • Fried nuts and onions – for garnish

For the masala paste

  • Boiled onion paste – 1 cup
  • Garlic – 1 tsp, chopped
  • Ginger – 1 tsp, chopped
  • Desiccated coconut – 2 tbsp
  • Cashews – 8–10
  • Water – ½ cup
  • Green cardamom – 2–3
  • Cinnamon – 1-inch piece

Method

  • Blend the ingredients listed for the masala paste into a smooth mixture.
  • Heat oil and ghee. Add shahi jeera and bay leaves.
  • Add the prepared masala paste and cook over medium heat for 3–4 minutes.
  • Add a little water followed by the curd-cream mixture, kasuri methi and salt.
  • Add the assorted vegetables and simmer until the gravy is beautifully infused with their flavours.
  • Fold in the fried makhana and garam masala. Simmer for 2 minutes.
  • Finish with rose water and garnish with fried nuts, onions and, if desired, a touch of saffron.

Chef’s serving suggestion: This korma is made for festive lunches, family dinners and soft naan.

MAKHANA TAVA PULAO

Smoky, spicy and packed with irresistible crunch

Give classic tava pulao a playful makeover by tossing roasted makhana through spiced rice and vegetables. The result is colourful, aromatic and wonderfully textural.

Ingredients

  • Makhana – 1 cup, fried or roasted
  • Cooked basmati rice – 1 cup
  • Oil – 1 tsp
  • Butter – 1 tsp
  • Jeera – ½ tsp
  • Mustard seeds – ½ tsp
  • Curry leaves – 4–5
  • Green chillies – 2, slit
  • Ginger-garlic paste – 1 tsp
  • Onion – 1 small, chopped
  • Tomatoes – 2 small, chopped
  • Carrot, beans, peas, cauliflower and capsicum – as desired, finely chopped
  • Pav bhaji masala – 2 tsp
  • Red chilli powder – ½ tsp
  • Water – ¼ cup
  • Coriander leaves – 2 tbsp
  • Mint leaves – 2 tsp
  • Cheese – 2 tbsp
  • Salt – to taste

Method

  • Heat oil and butter in a tava or broad pan.
  • Add jeera, mustard seeds, curry leaves and green chillies. Add onions and sauté until lightly browned.
  • Add tomatoes, salt and powdered spices. Splash in a little water and cook for 2–3 minutes.
  • Add the vegetables and bhunao with the masala for 3–4 minutes.
  • Add the cooked basmati rice and toss gently.
  • Stir in cheese, coriander and mint.
  • Finally, add the roasted makhana and toss just enough to retain its crunch.

Chef’s serving suggestion: Serve immediately with raita or curd, pickle and crisp papad.

MAKHANE KA DILKHUSH MEETHA

A creamy Indian dessert where makhana meets dates, nuts and milk

Who said makhana belongs only in savoury dishes? This luscious milk-based dessert transforms roasted makhana into a comforting sweet treat with dates, nuts, charoli and cardamom.

Ingredients

  • Makhana/fox nuts – 1 cup, lightly roasted
  • Milk – 3 cups
  • Green cardamom – 2
  • Sugar – to taste
  • Condensed milk – 2–3 tbsp
  • Mava – 2 tbsp, grated
  • Assorted nuts – 2–3 tbsp, chopped
  • Dates – 2–3, chopped
  • Charoli – 2 tsp, lightly toasted or fried

Method

  • In a thick-bottomed pan, bring the milk to a boil.
  • Add cardamom, sugar, condensed milk and grated mava. Stir frequently and reduce the milk for about 30 minutes.
  • Add some chopped dates, nuts and charoli. Simmer for another 4–5 minutes.
  • Add the roasted makhana and cook gently in the milk mixture for 6–8 minutes.
  • Chill thoroughly and garnish with nuts, dates and charoli.
  • For a seasonal twist, add diced mango or other suitable fresh fruit just before serving.

THE FINAL BITE

From a humble roasted snack to a luxurious korma, fragrant pulao and chilled dessert, makhana has the rare ability to move effortlessly across the menu.

Its delicate flavour makes it a perfect canvas for spices, herbs, nuts, dairy, vegetables and fruits. The secret, as always, is in treating the ingredient with imagination rather than allowing it to remain confined to the snack bowl.
