This Independence Day, the Tiranga is not merely something to admire—it is something to savour, share and celebrate. From saffron symbolising strength and courage to white representing peace and truth, and green reflecting fertility, growth and auspiciousness, the three colours carry a powerful message of India’s spirit.

And when those colours enter the kitchen, patriotism acquires a delicious new dimension.

This Independence Day, Celebrity Master Chef Dr Kaviraj Khialani gives the Tiranga a gastronomic makeover with five easy-to-make creations that combine colour, creativity and flavour.

From a regal Tiranga Subzi Pulao and sizzling Tiranga Paneer Zaikadaar to grilled sandwiches, chilled phirni and steamed semolina discs, the menu offers a mix-and-match celebration for both vegetarian and non-vegetarian food lovers.

So, this August 15, let the flag fly high—and let its colours shine bright on your plate too.

TIRANGA SUBZI PULAO — A TRICOLOUR FEAST IN EVERY GRAIN

Ingredients

  • Basmati rice – 2 cups, boiled and divided into three portions
  • Makhani gravy – 1½ cups for the saffron/orange layer
  • White onion-cashew-coconut gravy – 1 cup
  • Green spinach gravy – 1 cup
  • Star anise – 1, for the centre garnish
  • Fried onions/birista – 1 cup
  • Fried cashews and raisins – ½ cup
  • Rose water – 2–3 tbsp
  • Kewra essence – 2–3 tsp
  • Pure ghee – 2–3 tsp
  • Chopped coriander and mint – ½ cup
  • Saffron-milk solution – ¼ cup

Lightly colour the rice with safe edible food colours if desired, or simply toss each portion with its respective gravy and a little butter.

For the makhani layer: Add sautéed chicken tikka cubes for a non-vegetarian version, or paneer, mushrooms, carrots or soya chunks for vegetarian options.

For the white layer: Fried makhana, cooked potato cubes, grated cheese or cream cheese work beautifully. Fish or boneless chicken in a malai-tikka marinade can be used for a non-vegetarian variation.

For the green layer: Add green peas, blanched zucchini, broccoli, snow peas or methi-paneer koftas. Prawns, shrimps or sliced pahadi chicken tikka can be used for non-vegetarian versions.

Method

  • Prepare the three rice portions and cook the selected vegetarian or non-vegetarian ingredients in their respective gravies.
  • Grease a thick-bottomed kadai with a little ghee and begin layering the three preparations.
  • Sprinkle fried onions, nuts, raisins, herbs and the remaining flavourings between the layers before topping with the corresponding rice.
  • Place the kadai on a tava, cover tightly, seal the edges with atta or aluminium foil and give it dum for 20–25 minutes. Serve piping hot.

Chef’s twist: One pulao, three colours and a whole lot of patriotic flavour.

TIRANGA PANEER ZAIKADAAR — THREE COLOURS, ONE IRRESISTIBLE BITE

Ingredients

  • Paneer or tofu – 400 g, cubed and divided into three portions

Orange marinade: Tandoori marinade of choice.

White marinade: Oil, curd, cream, cashew paste, salt, garam masala and ginger-garlic paste.

Green marinade: Oil, curd, mint-coriander chutney, blanched spinach puree, green chilli-ginger-garlic paste and spices.

To serve: Mint-coriander chutney, assorted dips, sliced onion and lemon wedges.

Method

  • Coat each portion of paneer or tofu in the respective orange, white and green marinade. Allow to rest for 20–25 minutes.
  • Thread onto skewers and cook in a grill pan, non-stick pan, oven or tandoor.
  • Once cooked, remove from the skewers and arrange the three varieties together on a platter.
  • Finish with a squeeze of lime and a sprinkling of chaat masala. Serve with chutneys and accompaniments.

The same concept can be adapted with chicken or fish for non-vegetarian versions, while the marinated components can also be prepared a day ahead and refrigerated.

Patriotic plating idea: Arrange the three varieties in distinct bands so that every platter becomes an edible Tiranga.

TRI-COLOURED GRILLED SANDWICHES — THE TIRANGA BETWEEN TWO SLICES

Ingredients

  • White, brown or multigrain bread – 12–14 slices

Orange layer: Butter, tandoori mayonnaise or Schezwan sauce, deseeded tomato slices, salt, pepper and chaat masala.

White layer: Butter, eggless mayonnaise, sliced cucumber or boiled potato, grated cheese, salt, pepper and chaat masala.

Green layer: Butter, mint mayonnaise, shredded green capsicum, salt, pepper and chaat masala.

Method

  • Prepare all three fillings separately to create the desired tricolour effect.
  • Spread butter and the respective flavoured spreads over the bread and layer the fillings carefully.
  • Grill the assembled sandwiches on a grill pan or sandwich griller, turning carefully and brushing lightly with melted butter.
  • Once golden and attractively grilled, cut into triangles or squares and serve with ketchup, hung-curd mint-cucumber dip, green pesto chutney, wafers or fries.

Ideal for Independence Day brunches, evening gatherings and children’s celebrations, this is perhaps the easiest way to make patriotism part of a family snack.

TRIO SWEET TEMPTATIONS — END THE CELEBRATION ON A SWEET NOTE

Ingredients

  • Milk – 1 litre, boiled
  • Sugar – to taste
  • Condensed milk – optional
  • Green cardamom powder – ½ tsp
  • Rice paste – ½ cup
  • Rose water – 2–3 tsp
  • Mava – 100 g, grated

Orange layer: Orange essence, orange crush and orange segments.

White layer: Blanched sliced almonds.

Green layer: Fresh kiwi puree, kiwi crush or khus syrup.

For garnish: Crushed praline/chikki, glazed cherries or chopped meetha paan.

Method

  • In a thick-bottomed saucepan, combine milk, sugar, cardamom and rice paste. Stir continuously and cook for 30–45 minutes, until thick and custard-like.
  • Switch off the flame, adjust sweetness and divide the mixture equally into three portions.
  • Add the orange, white and green flavouring ingredients to their respective portions.
  • Layer the three preparations in dessert glasses or cups and garnish creatively.
  • Refrigerate for 2–3 hours before serving.

The result is a chilled, colourful dessert in which the flavours unfold layer by layer—just like the visual drama of the Tiranga.

TRICOLOUR DESI-TEMPERED SEMOLINA DISCS — A STEAMED PATRIOTIC SNACK

Ingredients

  • Semolina/rava – 1½ cups
  • Sour curd – 1 cup
  • Salt – to taste
  • Sugar – ½ tsp
  • Grated ginger – 1 tsp
  • Chopped green chillies – 1 tsp
  • Water – ½ cup
  • Carrot puree – 1 carrot, for the orange layer
  • Blanched spinach paste/chutney – ¼ cup, for the green layer
  • Baking soda – ¼ tsp for each layer
  • Oil or ghee – for greasing and tempering

For the tempering: Oil, hing, curry leaves, mustard seeds, slit green chillies, white sesame seeds, lime juice, chopped coriander and mint, water, sugar and a pinch of salt.

To serve: Assorted chutneys and dips.

Method

  • Mix semolina with sour curd, salt and a little water. Cover and rest for 20 minutes.
  • Prepare the carrot puree and spinach paste.
  • Divide the rested semolina mixture into three equal portions. Keep one white, mix one with carrot puree and the other with spinach puree.
  • Adjust the consistency with water and add baking soda to each portion.
  • Grease a steaming mould or thali. Steam the green layer first for 5–6 minutes, followed by the white and finally the orange layer for another 5–7 minutes.
  • Allow the steamed preparation to rest for five minutes, then loosen the edges, demould and cut into discs.
  • Prepare the tempering and pour it piping hot over the discs. Serve immediately with chutneys or dips.

THE FINAL FLAVOUR: PATRIOTISM, SERVED FRESH

The beauty of these recipes lies not merely in their colours but in the idea behind them. The Tiranga becomes a culinary canvas—where saffron, white and green come together just as India’s diverse people come together as one.
